The Tempranillo 'Proyecto Cencibel' by Tomas Torresano comes from a minimal intervention project that originates from young vines trained as bush at 680 meters above sea level in the Chozo del Pardillo area. Cencibel is the name by which Tempranillo is locally known in Castilla La Mancha, the region's principal grape variety. The winemaking takes place in steel with a short maceration, and subsequently, the wine is bottled immediately after fermentation, without filtration or clarification. On the nose, aromas of red and black fruits emerge, with floral hints of violet and balsamic notes of mint, while on the palate, strawberry is accompanied by herbaceous and floral notes, with a long finish.
