The Sparkling Classic Method Brut Classese by Francesco Quaquarini is a sparkling wine made from Pinot Noir grapes that expresses intense aromatic notes of pineapple, apple flesh, ripe pear, and grapefruit with hints of freshly baked bread on the nose. On the palate, it is enveloping thanks to its exuberant effervescence, balanced by great freshness and sapidity with a persistent aromatic finish.

The Brut Sparkling wine “Classese” by Quaquarini is a pleasantly fragrant bubbly, produced by a traditional organic winery located among the gentle hills of Oltrepò Pavese. A versatile bottle, ideal for toasting during convivial occasions and for uniquely accompanying the entire meal. A fresh and direct classic method, which simultaneously presents a consistent and broad structure, capable of exemplarily expressing the characteristics of an ancient rural territory, and a family reality where the cultivation of the vine has been passed down for more than three generations.

Francesco Quaquarini “Classese” is obtained from a careful selection of the best grapes from the Pinot Noir plots in the Canneto Pavese area. The vineyards are located in the lower hilly area, at an altitude of about 250 meters above sea level. Here, a viticulture attentive to the environment and local agricultural techniques ensures excellent production. The moderately sloped soils, with a good sandy composition, allow for the production of healthy and compact bunches, ideal for creating fine and aromatic sparkling wines. The The vinification involves a first fermentation in steel tanks, and a second fermentation in the bottle with a subsequent aging on the lees for 64 months. In this phase, the characteristics of aromatic complexity and the remarkable structure of this interesting label develop.

This interpretation of the principal grape variety of Quaquarini's classic method is the ideal sparkling aperitif. Its aromatic freshness, of white flowers and fresh fruit, makes it extremely interesting at the beginning of a meal and stimulates pairing with dishes based on shellfish and raw fish. In the glass, it presents a bright straw yellow color with golden reflections. The sip is enveloping, characterized by a creamy and soft perlage, which fills the palate with delicate aromas of white peach and citrus. A long and finely mineral finish leaves a sensation of lightness and liveliness in the mouth.
