The Sparkling Classic Method Brut of Albariño ‘36 months’ Paco & Lola is a bubbly from Val do Salnés in Galicia. After the refermentation in the bottle, it rests on the lees for at least two years, developing an essential and precise style, with a setup that enhances the typical sapidity of the area. On the nose, it expresses itself with hints of citrus peel, references to French pastry, and delicate notes of almond. On the palate, it shows balance and tension, with a creamy texture and fine bubbles that support the sip. It pairs well with sea bass carpaccio.
